  • For the Base:
  • 200g digestive biscuits (or chocolate biscuits)
  • 100g unsalted butter, melted

Ingredients :
  

  • 500 g cream cheese room temperature
  • 200 g dark chocolate melted
  • 100 g milk chocolate melted
  • 200 ml heavy cream
  • 100 g powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp espresso powder optional, for depth of flavor
  • For the Topping:
  • 100 g dark chocolate melted
  • 50 ml heavy cream
  • Gold flakes or chopped pistachios for garnish optional

Instructions :
 

  • Step 1: Prepare the Base
  • Crush the biscuits in a food processor or place them in a ziplock bag and crush them with a rolling pin.
  • Mix the biscuit crumbs with melted butter until well combined.
  • Press the mixture firmly into the base of the springform pan.
  • Chill in the refrigerator for 30 minutes to set.
  • Step 2: Prepare the Cheesecake Filling
  • In a mixing bowl, beat the cream cheese until smooth.
  • Add the powdered sugar, vanilla extract, and espresso powder, and mix well.
  • Gradually pour in the melted dark and milk chocolate, stirring continuously.
  • In a separate bowl, whip the heavy cream until soft peaks form, then fold it gently into the chocolate mixture.
  • Pour the cheesecake filling over the chilled biscuit base and smooth the top.
  • Refrigerate for at least 6 hours (preferably overnight) to set.
  • Step 3: Prepare the Chocolate Ganache Topping
  • Heat the heavy cream in a small saucepan until warm but not boiling.
  • Pour the warm cream over the melted dark chocolate and whisk until smooth.
  • Pour the ganache over the cheesecake and spread evenly.
  • Decorate with gold flakes or chopped pistachios for a luxurious touch.
  • Refrigerate for an additional hour before serving.
