Ingredients :
  

  • 200 g Pink Oreo cookies or any pink sandwich cookies
  • 50 g unsalted butter melted
  • 250 g cream cheese room temperature
  • 200 ml heavy cream
  • 100 g powdered sugar
  • 1 tsp vanilla extract
  • 10 g gelatin powder + 50ml warm water or agar-agar for a vegetarian option
  • 150 ml heavy cream
  • 50 g powdered sugar
  • Few drops pink food coloring
  • 5 g gelatin powder + 30ml warm water
  • 2-3 Pink Oreo cookies crushed (for decoration)

Instructions :
 

  • Step 1: Prepare the Crust
  • Crush the Pink Oreo cookies into fine crumbs using a food processor or a ziplock bag and rolling pin.
  • Mix the crushed cookies with melted butter until well combined.
  • Press the mixture evenly into the bottom of an 8×8-inch square pan (or springform pan).
  • Place in the refrigerator for 20 minutes to set.
  • Step 2: Make the Cheesecake Filling
  • In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  • In a separate bowl, whip heavy cream until soft peaks form.
  • Gently fold the whipped cream into the cream cheese mixture.
  • Dissolve gelatin in warm water and mix into the cheesecake batter.
  • Pour the mixture over the chilled crust and smooth it out.
  • Refrigerate for at least 1 hour until firm.
